Why does screw bolts break?
Generally, screw bolts are not easy to break during use unless under special circumstances.

Modify the screw bolt to create a screwdriver slot. It is possible to turn your screw bolt into a usable flathead one by carefully sawing a slot. This can be achieved using a small hacksaw or high-seed rotary tool. Then, use a screwdriver to remove.
Dig the teeth of the pliers into the screw bolt. This can provide enough pressure to loosen the screw bolt. Another option is to file two flat sides of the screw bolt, making it easier to achieve a firm grasp.
